Over thirteen years of creating new culinary spins on coffee and tea under our belt, the list of tried and true concoctions has grown tremendously. Trial and error is our friend, while the phrase "no ingredient is off limits" has become our mantra.

All of our signature libations are made with the finest local ingredients. When you come to Pines, you'll notice our menu is very streamlined. Twelve coffees and teas grace the menu. It is in this combination of twenty four beverages that will lead your tastebuds on an epic journey.

The industry has gotten to broad, spreading itself thin over hundreds of beverages, not creating any real "winners" but a class of middle of the road performers. It's time to simplify and reenergize the beverage category.

THE MAN

Over the course of thirteen years in the industry, there is no better creative expression for Ryan Thompson, founder of Pines Coffee and Tea, than working with his hands. Long hours working at a local coffee shop, Ryan was buried in the coffee industry, while others his age enjoyed the simple life of being students. It was in these years, an immersion was being done. Every brand was being dissected, from the top of the top to the bargain bottom. A palate was beginning to be groomed and a creative mindset being constructed. The yearning for something deeper was being created.

Several setbacks (including a diagnosis with Multiple Sclerosis) and some rough seasons ensued right after High School for Ryan, forcing him to take a long hard look at what it means to be live a healthy life. Finding out the correlation with inflammation and dairy consumption as well as the side effects of an unbalanced sugar ‘diet’ led to the experimentation of new flavors not normally associated with coffee took a front seat. No ingredient was off limits. If coffee was going to be reinvented, boundaries being placed on it needed to be broken. Attention to the details were vital, his journey would find out from the beginning. Transparency in all aspects of the trade were essential. No more highlighting one aspect of the coffee just to fail on the backend with something else.

What if a company could be powered by adventure and wanderlust tastebuds? Pure unadulterated ingredients thrive and tastebuds are once again celebrated. Coffee and tea are viewed as culinary ingredients, paired with the most exotic flavor profiles one could think of. No artificial preservatives, fake ingredients, or corn syrup. No carrageenan, burnt beans, or mass produced sugar concoctions with caramel. This wouldn't be just another coffee shop, but a movement. What if this just wasn't hypothetical, but a reality ...

After years working on the corporate umbrella, the time had come for Ryan to strike it out on his own and make this dream a reality. Cashing in all of his savings and spending every penny, Pines was birthed in a small five square foot vintage FotoMat booth in the heart of Vancouver. The space was small but the mission was big: make coffee fresh again.

The first drink to hit the menu and stick with customers was the Black Alder mocha. Since it was launched this beverage has journeyed through a total of seven different recipe changes. Quality isn't just a word thrown around. Recipe upgrades happen frequently as better and higher quality ingredients become available. If you haven’t had the opportunity to indulge in this drink, it is an orange oil infused dark chocolate mocha. The profile of this drink was meant to go after, in the beginning, of that similar to the chocolate covered oranges found at Christmas time. Not finding an ‘orange syrup’ led eventually to experimentation with pure cold pressed oil. It was found to retain all of its nutritional components of the orange itself while eliminating the sugar associated with fake sugar syrup. The result: instant success. A super smooth dark chocolate mocha with the taste of real oranges added but not at the expense of your gut. Ryan knew he was on to something, and it was starting to stick.

No matter how big your giants may seem, be fearless in the pursuit of what sets your soul on fire. A person with a dream and a vision is more powerful than a person with facts and a budget. It only takes one to change the world. What's holding you back?
