  • In the case of branches of herbs, you have to make sure they are clean, preferably passed through water mixed with vinegar.
  • We're also going to peel the onion, just like the carrots. We will cut the latter on wheels.
  • Then we will peel the garlic cloves. We will also peel the corn cobs and chop each one into about five wheels.
  • In the case of the zucchini, we will remove the branch, we will wash it well and cut it into slices.
  • The meat must be cooked (the easiest thing is to boil it for 35 minutes in a pressure cooker). Remove the pieces of fat that may have stuck, and arrange it in a pot with water, onion and garlic.
  • To remove another part of the fat on the meat, we will boil it and remove a layer of white foam that will form on the surface of the water.
  • After that step, we will leave this broth in cooking for one hour, with the pot covered and at medium heat.
  • After that time, we will begin to add the vegetables. We will start with the pieces of corn cob, which we will let cook until we reach the point where the meat turns soft. Normally, this should take an additional 30 minutes.
  • After that time, we go fishing the garlic and onion cloves in the broth, to remove them and replace them with potatoes, carrots, herbs and pumpkin (I hope I have not forgotten anything). We will also add salt and pepper to taste.
  • Let the broth cook for another half hour , to then add the zucchini, which is an ingredient that melts easily, and therefore should not be cooked for a long time. If the pumpkin pulp they chose is very ripe and tends to get rid of, they can also wait until this point to add it, instead of at the same time as the carrots. Add also the chickpeas.
  • From this point, cook for 15 more minutes or until the carrots are soft. Before turning the pot off, try the broth to see that it is sufficiently salty, and if not, correct the seasoning with more salt and/or pepper.
  • At the time of serving, you can accompany your beef stock with drops of freshly cut lemon juice and bread, or tortillas.
